Ketel One ‘Garnished with Good’ on ClaREnce Street 

One bar's trash is another bar's treasure. 

For the first time, Matt Whiley will be taking the Ketel One ‘Never Wasted’ concept from his award winning venue RE and into Sydney's CBD. Four bars on Clarence Street - The Barbershop, PS40, Old Mate's Place and The Lobo - have been hand picked to participate in this circular economy of bars utilizing each other's waste to feature a Ketel One Never Wasted cocktail.

Locate the discrete ground-level entrance in an office block on Clarence Street and then take the lift or make your way up four levels of steep, narrow stairs and you will find yourself in this 98-capacity venue, filled with brown-leather booths with bookcases and foliage peeping from every nook and cranny.

To access the drawcard rooftop bar you’ll need to climb another set of stairs (this space closes at 11 pm). The rooftop features more greenery and offers 360-degree views of the city’s skyscrapers. There’s a short and sharp cocktail list to select from and food on offer too. Sink your teeth into a hefty Philly cheese steak, (there are six versions, including vegetarian options) or take it light and breezy with a rotating selection of deli meats and ploughman’s plates.
